Best Indo Italian Fusion Pasta Recipe

Fusion cooking, a combination of various types of cuisine has become popular by demand, almost a way of life. Creating traditional dishes from cultures with non-traditional ingredients! Another incarnation of fusion cuisine implements a more eclectic approach, which generally features original dishes that combine varieties of ingredients from various cuisines and regions.

This specific recipe presents a great Italian, Indian fusion. And a fairly quick and easy recipe to make once the chopping is behind you, in fact the cooking time is only 15 minutes. Another great benefit of this dish is its health qualities in that it consists mostly of veggies and semolina! So let us get started…

Indo Italian Delight

500 gm Semolina Pasta
2 onions
Bell Peppers (1 of red and green each)
1-2 green chillies
6 medium sized tomatoes
1 Carrot
Baby Corn (4-5 pieces)
2-3 strands of garlic
Vinegar
Curd
Tomato Ketchup
Oregano and herbs
Olive Oil
Salad Dressing
Olives (only if you absolutely love them)
Salt (as per taste)
1 tspn turmeric powder
Red Chilli Flakes
1.5 tbspn coriander powder
1.5 tbspn coriander powder
Method
Boil the pasta for approximately 8-10 minutes until it is soft enough for eating. Cool down at room temperature for approximately 10 minutes. Chop onions, bell peppers, chillies, garlic, carrot and baby corn into small slices and toss them in olive oil. Add the salt, turmeric powder and coriander powder. Remember to cook in low flame to savour the original flavour of veggies. Grate the tomatoes into a fine paste, and add this to the veggies. Add fragments of pasta 7-8 at a time until it starts getting absorbed in the gravy sauce. Add 1 tspn of curd, 3 tbspns of vinegar and 1.5 tbspns of salad dressing. Mix well. Add chilly flakes, ketchup. Let your kitchenette sink in the aroma of what will soothe your belly. Garnish with fresh coriander leaves, oregano and herbs. Serve with Tomato Soup/ Garlic bread sticks for a wholesome meal!
